Greetings, Members!

Farm News: Finally a little relief from the heat!  Friday and Saturday felt amazing, and we got an inch of rain last week!! Hooray!!!  It had been so hot and so dry for so long that you kind of forget what a nice comfortable day felt like.  Thank goodness most of the plants enjoyed that long run of heat we had.  As long as Adam was able to irrigate them, they were doing great with a couple of exceptions.

The onions took a hit in the heat.  We will still harvest thousands of them, but they just won’t be as large as last year.  Also the broccoli and kale have struggled in the heat, but we have more coming so when the weather moderates a little more we should be back on track with some good quality kale and broccoli. The green beans stopped producing during the heat, but now they seem to be producing normally again so expect to seem them again in the share or extra boxes. The winter squash looks amazing as does the melon crop.  We hope to be sending out cantaloupe in the next month, which also means watermelons are growing rapidly too.

This week’s harvest includes:

New Potatoes (Red Norland), Green Beans (Provider), Summer squash (Success and Goldy) and Zucchini (Dunja and Partenon), Patty Pan Summer Squash (saucer-shaped) Cucumbers (Corinto and Tasty Jade…longer ones), Basil (Genovese), Tomatoes (Big Beef, Trust, or Cobra), Carrots (Nelson), Eggplant (Falcon [purple] or Listada , [white and purple]), green peppers (lipstick and Ace), hot peppers (Jalapeno), red head lettuce (Magenta), romaine lettuce (Paris Island) sage, and parsley (triple curled or Giant from Italy). *Variations from the above list may happen.

Reminders and Important Notices: Remember to mark your calendar to attend the watermelon feed Saturday, September 1st from 10am-1pm.

Share Box / Delivery Logistics:

  1. Please return the tops to the share boxes if you do take from the Farm or Mankato sites.
  2. If you like baking or making pancakes consider ordering directly from our new partners at Good Earth Mill and Grains, for delivery in August, ASAP see their website or last weeks email for information.

Recipes and Tips

If you have great recipe ideas or preserving suggestions, please email them to us in a word document so we can share in our newsletter.  Member ideas are always appreciated.

Parslied Carrots

  • 2-3 cups sliced carrots (1/4 inch thick)
  • ½ -1 tablespoon butter or margarine
  • ¼ – ½ cup chopped fresh parsley

Cook the carrots in boiling water for about 10 minutes, until tender, drain.  Return to pot and stir in butter or margarine and parsley, cook, stirring, until butter melts.

Parslied Rice

  • 1 cup long-grain rice
  • ¼ cup chopped parsley
  • 1 tablespoon butter
  • salt

Cook the rice.  Once the rice is cooked stir in ¼ the parsley, butter, and salt. Enjoy this simple delicious buttered rice with parsley.

Herbs

A great way to use this week’s herbs (basil, parsley or sage) is to chop and freeze in butter, or dried for use later.  Herbs can also be frozen alone and remember to date/label your bag/container.
